Benario is a trading name of AuSaMicS Pty Ltd (ABN 56 676 640 467). For food use only. Always follow recommended usage levels and applicable Australian food standards.

Sodium Citrate Dihydrate is highly concentrated — always start small and build up. Dissolving in warm water before adding to your mixture gives the most even, consistent colour.

Recommended usage levels
Application Usage level Purpose
Processed cheese / cheese sauce 2 – 3% Emulsification, smooth melt
Beverages / sports drinks 0.1 – 0.5% pH buffering, mild flavour
Jams & preserves 0.1 – 0.3% pH control, pectin activation
Baked goods 0.1 – 0.5% Leavening aid, flavour balance
Ice cream / gelato 0.1 – 0.3% Texture stabiliser
Electrolyte / nutrition blends 0.5 – 2% Sodium source, buffering agent
Tips for best results
  • Always dissolve in water before adding to your formulation for even distribution
  • For cheese sauces, melt the cheese into a sodium citrate solution over low heat — stir constantly
  • Most effective in slightly acidic to neutral pH (pH 5.5–8)
  • Can be combined with citric acid to fine-tune pH in beverages
  • Prepared solution is stable for up to 2 weeks refrigerated in a sealed container
Storage
  • Store in a cool, dry place away from direct sunlight
  • Keep container tightly sealed after every use
  • Slightly hygroscopic — keep container tightly sealed to prevent clumping
  • Shelf life: 24 months from manufacture date when stored correctly

Usage levels are indicative. Always comply with FSANZ Standard 1.3.1 for permitted levels in specific food categories. Benario / AuSaMicS Pty Ltd accepts no responsibility for use outside recommended guidelines.
