Lactose is the naturally occurring sugar found in milk — a disaccharide composed of glucose and galactose. Food-grade Lactose powder is used as a bulking agent, flavour carrier, sweetener, fermentation substrate and excipient across a wide range of food and nutritional applications. Approximately 20% as sweet as sucrose with a mild, clean dairy flavour. Essential in infant formula, confectionery, bakery products, flavour systems, fermented dairy cultures and nutritional blends.

Chocolate / confectionery 5 – 20% Milk solids replacement, sweetness and body
Baked goods 2 – 10% Promotes Maillard browning; moisture retention
Infant formula / nutritional blends As per formulation spec Primary carbohydrate — regulatory compliance required
Lactic acid bacteria fermentation 1 – 5% Fermentation substrate for yoghurt and cheese cultures

Lactose vs other carbohydrate ingredients
Ingredient Sweetness vs sucrose Hygroscopicity Maillard browning Fermentable by yeast
Lactose (milk sugar) ~20% Low Yes — dairy-caramel No (standard yeast)
Dextrose (glucose) ~75% Medium Yes — fast Yes — 100%
Sucrose (table sugar) 100% Low Yes — standard Yes (inverted first)
Maltodextrin ~15% Medium–High Limited Partial
💡 Formulation tip: Lactose is one of the best flavour carriers available — its crystalline structure physically traps volatile flavour compounds, protecting them during processing and releasing them during consumption. This makes it ideal as a carrier in spray-dried and encapsulated flavour systems. In baking, Lactose undergoes the Maillard reaction faster than sucrose, contributing to deeper browning and a richer, more complex flavour at lower concentrations. Note: Lactose must be declared as a milk allergen on all finished product labels in Australia.
Tips for use
  • Dissolve in warm water (above 38°C) for faster dissolution — solubility increases significantly with temperature
  • In dry blends, Lactose acts as an excellent carrier for spray-dried flavours and vitamins
  • Low hygroscopicity makes it ideal for tablet compression and dry powder applications
  • Not fermentable by standard brewing yeasts — residual Lactose adds body and mouthfeel to stouts and milk beers
  • Always declare as milk allergen on finished product labels — mandatory under FSANZ Standard 1.2.3
⚠️ Mandatory allergen labelling: All finished food products containing this ingredient must declare "Contains milk" on the label under FSANZ Standard 1.2.3. Ensure your product labelling complies before going to market.
Storage
  • Store in a cool, dry place away from direct sunlight and moisture
  • Keep container tightly sealed — low hygroscopicity but moisture will cause caking over time
  • Shelf life: 24 months from manufacture date when stored correctly
  • Keep away from strong oxidising agents

Usage levels are indicative. Always comply with applicable FSANZ food standards. Allergen labelling is mandatory. AuSaMicS Pty Ltd accepts no responsibility for use outside recommended guidelines or for non-compliant labelling.

Frequently asked questions
Lactose is used as a bulking agent to add volume without strong sweetness, as a flavour carrier in dry seasoning and flavour systems, as a fermentation substrate for lactic acid bacteria cultures, as an excipient in tablet and capsule manufacture, and as a browning agent in baked goods and confectionery. It is also the primary carbohydrate source in most infant formula products.
Yes. Lactose is derived from cow's milk and must be declared as a milk allergen on all Australian food product labels under FSANZ Standard 1.2.3. The declaration is required regardless of the quantity used. Typical label statement: "Contains milk." People with milk allergy must avoid products containing Lactose. People with lactose intolerance (enzyme deficiency, not allergy) should also be advised.
Lactose is approximately 20% as sweet as sucrose (table sugar). It has a very mild, clean dairy sweetness with no bitter or sour aftertaste. It is not used as a primary sweetener but contributes background sweetness and body in dairy-flavoured products, confectionery and baked goods.
Lactose is a disaccharide (glucose + galactose) with mild sweetness (~20% vs sucrose), low hygroscopicity and excellent flavour-carrying properties. Dextrose is a monosaccharide (glucose) that is ~75% as sweet as sucrose, 100% fermentable by most yeasts, and has higher hygroscopicity. Lactose is not fermentable by standard brewing yeasts. Both contribute to Maillard browning but Lactose does so more slowly and with a distinct dairy-caramel flavour note.
Food-grade Lactose meets FSANZ and FCC standards for purity and safety. Pharmaceutical-grade Lactose (Ph.Eur. or USP) meets additional stringent requirements for particle size, compressibility and microbial limits for use as a tablet or capsule excipient. For nutraceutical tablet manufacture, pharmaceutical-grade is recommended. For general food applications, food-grade is appropriate.
Yes. Email info@benario.com.au with your order number for a batch-specific Certificate of Analysis including assay, moisture, heavy metals and identity confirmation.
The 1kg pack suits home bakers, R&D testing and small-scale production. The 2.5kg and 5kg are best value for regular commercial use, food manufacturers and fermentation facilities.
