Lactose is the naturally occurring sugar found in milk — a disaccharide composed of glucose and galactose. Food-grade Lactose powder is used as a bulking agent, flavour carrier, sweetener, fermentation substrate and excipient across a wide range of food and nutritional applications. Approximately 20% as sweet as sucrose with a mild, clean dairy flavour. Essential in infant formula, confectionery, bakery products, flavour systems, fermented dairy cultures and nutritional blends.

- Dissolve in warm water (above 38°C) for faster dissolution — solubility increases significantly with temperature

- Not fermentable by standard brewing yeasts — residual Lactose adds body and mouthfeel to stouts and milk beers

- Store in a cool, dry place away from direct sunlight and moisture
- Keep container tightly sealed — low hygroscopicity but moisture will cause caking over time
